It depends what game it's in. I have played three (original, 64 and Assault), and it totally varies between them.
In the original the Landmaster didn't exist
In 64 the Landmaster was hard to control and the LM gameplay sucked
In Assault the Landmaster ruled.
In all of them the Arwing gameplay was the same.
I prefer the Arwing.

I choose the landmaster. If I remember correctly, Landmaster could shoot things out of the sky, while the Arwing can't take down a tank.
