Blastoise (or any water Pokemon for that matter) can be used for fire-fighting.

Small flying-types like Pidgey and Spearow carry mail.

Certain Pokémon like Castform are put to work in labs to monitor weather. Porygon is used to study programming.

Smeargle paints, obviously.

Shuckle and Parasect can be used to make potions and Berry Juices.

Lol the castforms in the forecast... it must be boring to be a castform, all you'd do is sit and wait.

-Donphan sniffs out amethyst
-In shadows of almia, you can ride a wailord like a boat
-certain pokemon can be used for theatrical effects (thunder, rain, sun, etc.)
-poliwag can find weeds
-gloom has ingredients in it for perfume (well, its sort of work...)
-some pokemon have medicinal use (same as above)
-mr. mime cleans and does chores
